Snacks - Peanut Butter Cupcakes with Natural Yoghurt

Makes 16

I stole this recipe from my boyfriend's Grandma's cupcake book, the name of which I can't remember! But I will find out to avoid plagiarism... Again it has been slightly altered to make it more wholesome :)

75g unsalted butter
130g smooth peanut butter
95g dark brown soft butter
2 large eggs
1tsp vanilla extract
120g plain wholemeal flour
1tsp baking powder
Pinch of salt
60ml semi skimmed milk at room temperature

Pre-heat the oven to 160 degrees C
Mix the butter, peanut butter and sugar
Add 1 egg and mix
Add the second egg and mix
Add the vanilla extract
Combine the flour, baking powder and salt in a separate bowl
Add 1/3 of the dry mix to the wet mix and mix
Add 1/3 of the milk and mix
Repeat until everything is combined
Fill 16 cupcake cases so they are about 2/3 full
Bake 20mins
Cool for 10mins

Spoon over 1tbsp on natural yoghurt before serving
